There is a distinct moment in late spring when the afternoon sun starts to hold a bit more heat, prompting us to slow down, step onto the porch, and pour something refreshing.
Today, we’re sharing a staple from our farmhouse kitchen that bridges the gap between the herb garden and the honeybee: Sweet Lemon Herb Iced Tea.
This isn't your average sweet tea. By combining the bright, citrusy notes of fresh lemon basil (or mint) with the precise, delicate sweetness of our pure farm honey sticks, you get a clean, crisp beverage that tastes exactly like a sunny day on the farm.
The Ingredients
4 cups of water
3 bags of high-quality organic black or green tea
1 small handful of fresh lemon basil or mint leaves (straight from your garden if you have it)
2–3 Garden of Eden Company Honey Sticks
1 fresh lemon, sliced for garnish
The Method
Brew the Base: Bring your water to a gentle boil. Remove from heat, add the tea bags, and let them steep for 5 to 7 minutes depending on how robust you like your tea. Remove the tea bags.
Wake the Herbs: Take your fresh herb sprigs and gently clap them between your hands. This bruising action instantly releases the essential oils without making the leaves bitter. Drop them right into the warm tea.
Snip and Stir: While the tea is still warm, snip the ends of your honey sticks and squeeze the pure honey directly into the pitcher. Give it a good stir until fully dissolved.
Chill and Serve: Let the mixture cool to room temperature, then strain out the herbs if you prefer a perfectly clear tea. Pour over a tall glass filled with ice, garnish with a fresh lemon slice and an extra sprig of herbs, and enjoy.
